I recently completed the Mexico Ancient Civilizations tour as part of the Mexico and Central America on 29 December 2012.

It looks like you had a great time; I did it in February 2011 and it was as great as you're telling.

The daytrip out Oaxacca, Mount Alban and the Cenotes off Merida were my highlights as well.
Chichen Itza was a little bit disappointing because they stopped allowing to climb the pyramid shorty before we arrived there. (But I climed the pyramid in Teotihuacan)

Totally agree about Chichen Itza, it's understandable they don't able any climbing but since it happens at every other site you leave a little disappointed. They also restrict a lot of the walking areas and it felt like 100s of vendors in there selling stuff. Personally I found all the other ruins in particular Mount Alban to be a lot better.

You'll have a great adventure. Just need to remember that it is always warm in Mexico. Try or plan to undertake all the optional activities. Shorts and swim wear are musts, sandals / flip flops and sunscreen. You should be able to buy whatever you forget or even lose.

Regarding food and drink you shouldn't have any problems. Trip CEO should make good suggestions. Personally I loved the pineapple juice drinks.

Any particular questions let me know. My blog gives a day by day breakdown as well. I am a little jealous, would love to go back. Have fun!
