Hangi etiquette
Anyone know if there is special etiquette that should be observed at a New Zealand hangi?

Not for the hangi itself but will depend on where it is.
Generally just normal manners at a beach/backyard hangi.
But if held on a Marae, there will be etiquette or customs to observe for the arrival/welcoming onto the Marae and seating arrangements.All that would be explained to you by your host/guide.

There's a local one here that I was thinking of attending... didn't know if I'd be expected to dance or be shouted at by some warrior guy...

The challenge can be awesome.Remember to keep your eyes on him when you pick it up.Don't look away from him.I think that's correct.
